This is white garlic that has been caramelised over many days in a special oven that controls both temperature and humidity until the garlic turns black. The end product is delicious and tastes a little like balsamic and tamarind. It can be eaten straight from the jar or added to cheese platters, spread on savoury biscuits or toast or even made into an aioli or mixed into butter to be drizzled over meat or vegetable dishes.
